Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Ramekins

Grease four ramekins (about 6 oz each) with butter and lightly dust with flour. Set aside.

Making the Cake Batter

  1. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.

  2. 4

    Mix Sugar, Eggs, and Vanilla

In a separate bowl, whisk together the granulated sugar, large eggs, and vanilla extract until well combined and slightly frothy.

  3. 5

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture and stir until combined.

  4. 6

    Add Flour and Salt

Sift in the all-purpose flour and add a pinch of salt. Gently fold the flour into the batter until just combined; do not overmix.

Baking

  1. 7

    Fill Ramekins

Evenly distribute the batter among the prepared ramekins, filling them about 3/4 full.

  2. 8

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is soft.

  3. 9

    Cool Slightly

Remove from the oven and let the cakes cool in the ramekins for 1-2 minutes.

Serving

  1. 10

    Invert and Serve

Carefully run a knife around the edges of each ramekin and invert onto a plate. Dust with powdered sugar and serve warm with a scoop of vanilla ice cream.
