Chicken-Fried Steak

    Prepare the Steak

    Flatten the top sirloin steaks to about 1/2 inch thick using a meat mallet. Season both sides with salt and black pepper.

    Breading

    In a shallow dish, combine the flour with salt and pepper. In another shallow dish, whisk together the buttermilk and eggs. Dip each steak in the flour, then the buttermilk mixture, and back into the flour, ensuring a good coating.

    Fry the Steak

    Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the breaded steaks and fry for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and let drain on paper towels.

Peppered Country Gravy

    Make the Roux

    In the same skillet used for frying the steaks, reduce the heat to medium and add butter. Once melted, stir in the flour and cook for about 2 minutes until lightly browned.

    Add Milk

    Gradually whisk in the milk, stirring continuously until the gravy thickens. Add black pepper and salt to taste, and simmer for a few minutes.

Roasted Garlic-Buttermilk Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the russet potatoes into chunks. Boil them in salted water until tender, about 15-20 minutes.

    Roast the Garlic

    While the potatoes are cooking, slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast in a 400°F oven for 30-35 minutes until soft.

    Mash and Combine

    Drain the potatoes and return to the pot. Squeeze the roasted garlic into the potatoes, add butter and buttermilk, and mash until smooth. Season with salt and black pepper.

Smoky Bacon Green Beans

    Cook the Bacon

    In a skillet, cook bacon over medium heat until crispy. Remove and drain on paper towels, leaving the drippings in the pan.

    Sauté Green Beans

    Add the green beans to the skillet with the bacon drippings and sauté for about 5-7 minutes until tender. Add minced garlic, salt, and black pepper, cooking for an additional 2 minutes.

    Add Bacon

    Crumble the cooked bacon and stir it into the green beans just before serving.
