Fried Chicken

Marinate the Chicken
In a large bowl, add the chicken breasts and thighs and pour in the buttermilk. Ensure the chicken is fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.

Prepare the Breading
In another bowl, mix together the flour, cornstarch, baking powder, garlic powder, onion powder, paprika, salt, and black pepper.

Bread the Chicken
Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, pressing firmly to ensure an even coating.

Fry the Chicken
Carefully place the breaded chicken into the hot oil. Fry in batches, cooking for about 7-10 minutes on each side or until golden brown and cooked through. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).

Drain and Rest
Remove the chicken from the oil and place on a wire rack or paper towels to drain excess oil. Allow to rest for 5 minutes before serving.

In a large bowl, whisk together the flour, baking powder, sugar, and salt.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are okay.

Preheat a waffle iron according to the manufacturer’s instructions. Grease with a little butter or oil. Pour the batter into the waffle iron and cook until golden brown, about 4-5 minutes.
