Prepare the Ingredients
Chop the onion, green bell pepper, celery, and green onions. Mince the garlic and chop the parsley. Cut the chicken thighs into bite-sized pieces and slice the andouille sausage.

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Sprinkle in the flour and stir continuously for about 20-30 minutes until the roux turns a deep brown color. Be careful not to burn it.
