Method

Preparation of Eggs

  1. 1

    Boil the Eggs

Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the pan and remove it from the heat. Let it sit for 12 minutes.

  2. 2

    Cool the Eggs

After 12 minutes, carefully transfer the eggs to an ice bath (a bowl filled with ice and cold water) to cool for about 5 minutes.

  3. 3

    Peel the Eggs

Once cooled, gently tap each egg on a hard surface to crack the shell, then peel them under running water to make it easier.

Making the Filling

  1. 4

    Prepare the Egg Yolks

Slice each peeled egg in half lengthwise. Remove the yolks and place them in a mixing bowl. Set the egg whites aside.

  2. 5

    Mix the Filling

To the bowl with the yolks, add mayonnaise, Dijon mustard, sweet pickle relish, salt, black pepper, and paprika. Mash together with a fork until smooth and well combined.

  3. 6

    Add Chives and Bacon

Fold in the chopped chives and crumbled bacon into the yolk mixture until evenly distributed.

Assembling the Deviled Eggs

  1. 7

    Fill the Egg Whites

Using a spoon or a piping bag, fill each egg white half with the yolk mixture.

  2. 8

    Garnish the Deviled Eggs

Sprinkle the filled deviled eggs with additional chopped chives and a dash of paprika to garnish before serving.
