    Prepare the Pulled Bacon

    In a pot, combine the bacon and water. Bring to a boil then reduce to a simmer. Cook for about 2-3 hours until the bacon is tender and can be pulled apart easily.

    Make the Hollandaise Sauce

    In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a saucepan of simmering water (double boiler). Gradually whisk in melted butter until the sauce thickens. Season with salt, pepper, and paprika.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide them into the water. Poach for about 3-4 minutes for a runny yolk. Remove with a slotted spoon and drain on paper towels.

    Toast the English Muffins

    Split the English muffins and toast them until golden brown.

    Assemble the Dish

    On each toasted muffin half, layer pulled bacon, a poached egg, and drizzle with hollandaise sauce. Garnish with chopped chives.
