Crust and Filling
Method
Preparation
- 1
Make the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine the all-purpose flour, finely chopped basil, melted butter, and granulated sugar. Mix until a dough forms. Press the mixture into the bottom of a greased 9x9 inch baking dish. Bake for 15-20 minutes or until lightly golden.
- 2
Prepare the Blueberry Sauce
In a saucepan over medium heat, combine the blueberries, cornstarch, and lemon juice. Cook for about 5-7 minutes, stirring occasionally until the blueberries break down and the mixture thickens. Remove from heat and let cool slightly.
- 3
Make the Cream Layer
In a mixing bowl, beat the softened cream cheese and powdered sugar until smooth. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined.
- 4
Assemble the Bars
Once the crust has cooled, spread the blueberry sauce evenly over the crust. Then, spread the cream layer on top of the blueberry sauce. Chill in the refrigerator for at least 2 hours before cutting into bars.
