Prepare the Battering Mixture
In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the summit beer until you have a smooth batter. Let it rest for 15 minutes.

Heat the Oil
In a deep saucepan, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Cheese Curds
Dip the fresh cheese curds in the beer batter, then carefully drop them into the hot oil. Fry until golden brown, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

Make the Balsamic Aioli
In a small bowl, mix together balsamic vinegar, mayonnaise, and a pinch of salt. Stir until well combined.

Prepare the Sambal Honey
In another small bowl, combine sambal oelek and honey. Mix until smooth.
