Prepare the Potatoes
Wash the Russet potatoes thoroughly and slice them into thin strips, about 1/4 inch thick.

Heat the Oil
In a deep pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the soaked potatoes and pat them dry. Fry them in batches until they are golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.

Season the Fries
While the fries are still hot, sprinkle them with salt and black pepper to taste.

Drizzle the truffle oil over the hot fries, then sprinkle generously with grated Parmesan cheese and chopped fresh parsley.
