Prepare the Brisket
Preheat your smoker to 225°F (107°C). Trim excess fat from the brisket and cut it into 1-inch cubes.

Make the Rub
In a bowl, mix together the brown sugar, paprika, garlic powder, onion powder, black pepper, and salt. Rub the mixture all over the brisket cubes.

Smoke the Brisket
Place the brisket cubes in the smoker and cook for about 4 hours, or until they reach an internal temperature of 190°F (88°C).

Rest and Serve
Let the burnt ends rest for about 15 minutes before serving. Enjoy with pickle, coleslaw, and potato salad.
