Cooking Instructions

  1. 1

    Prepare the Brisket

Preheat your smoker to 225°F (107°C). Trim excess fat from the brisket and cut it into 1-inch cubes.

  2. 2

    Make the Rub

In a bowl, mix together the brown sugar, paprika, garlic powder, onion powder, black pepper, and salt. Rub the mixture all over the brisket cubes.

  3. 3

    Smoke the Brisket

Place the brisket cubes in the smoker and cook for about 4 hours, or until they reach an internal temperature of 190°F (88°C).

  4. 4

    Sauce the Burnt Ends

Remove the brisket from the smoker and toss the cubes in BBQ sauce. Return them to the smoker for an additional 1-2 hours until caramelized.

  5. 5

    Rest and Serve

Let the burnt ends rest for about 15 minutes before serving. Enjoy with pickle, coleslaw, and potato salad.
