    Wash and dice the red bell pepper, green bell pepper, zucchini, and mushrooms. Rinse the spinach and set it aside.

    Whisk the Eggs

    In a medium bowl, crack the eggs and whisk them until well combined. Add salt and black pepper to the eggs and mix well.

Cooking

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced red and green bell peppers, zucchini, and mushrooms. Sauté for about 5-7 minutes or until the vegetables are tender.

Assembling the Burritos
