Base Preparation

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

    Combine Wet Ingredients

    In another bowl, mix the milk, egg, and melted butter until fully incorporated.

    Combine Mixtures

    Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

Cooking Base

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Prepare Baking Pan

    Grease a small baking dish or two small round cake pans with butter or cooking spray.

    Bake the Base

    Pour the batter evenly into the prepared baking dish or pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Filling Preparation

    Prepare Cream Cheese Mixture

    In a mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar, vanilla extract, and lemon zest. Mix until well combined and creamy.

Assembly

    Cool the Base

    Remove the baked base from the oven and allow it to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

    Cut and Fill

    Once cooled, cut the base in half horizontally. Spread the cream cheese mixture evenly on one half, then place the other half on top to create a sandwich.

    Serve

    Slice into small pieces and serve as delightful 'Small' halves.
