Method

Preparation

  1. 1

    Mix Dry Ingredients

In a medium bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

  2. 2

    Combine Wet Ingredients

In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

Cooking

  1. 3

    Combine Mixtures

Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined. Be careful not to overmix; lumps are okay.

  2. 4

    Heat the Pan

In a non-stick skillet over medium heat, add the unsalted butter or oil and let it melt, coating the bottom of the pan.

  3. 5

    Cook Pancakes

Using a 1/4 cup measure, pour the batter onto the skillet. Cook for 2-3 minutes or until bubbles form on the surface and the edges appear set. Flip the pancakes and cook for an additional 1-2 minutes until golden brown.

  4. 6

    Serve

Remove the pancakes from the skillet and serve warm with your choice of toppings such as syrup, fruit, or whipped cream.
