Prepare the Ingredients
Gather all the ingredients including roast beef, cheddar cheese, sandwich rolls, and optional toppings.

Heat the Beef
In a skillet over medium heat, warm the thinly sliced roast beef for about 3-5 minutes, stirring occasionally until heated through. Season with salt and black pepper to taste.
Assembling the Sandwich

Prepare the Rolls
Slice the sandwich rolls open lengthwise, taking care not to cut all the way through. This will create a pocket for the filling.

Add the Beef
Layer a generous portion of the warm roast beef into each sandwich roll.

Add the Cheese
Top the beef with slices of cheddar cheese, allowing it to melt slightly from the heat of the beef.
Final Touches

Add Condiments
Spread horseradish sauce and Dijon mustard on the inside of the sandwich rolls, then close the rolls.

If desired, add sliced pickles, shredded lettuce, and tomato slices to the sandwich for extra flavor and texture.
