Making the Pie Crust

    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add the ice water, one tablespoon at a time, mixing until the dough starts to come together. Do not overmix.

    Chill the Dough

    Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

    Roll Out the Dough

    On a floured surface, roll out one disk of dough to fit your pie dish. Place the rolled-out dough into the dish and trim the edges.

Preparing the Peach Filling

    Mix the Filling

    In a large bowl, combine the sliced peaches, granulated sugar, all-purpose flour, ground cinnamon, and lemon juice. Toss gently to coat the peaches evenly.

    Pour the peach filling into the prepared pie crust and dot with diced butter.

Baking the Pie
