Pancake Batter Preparation

    Mix Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

    Combine Wet Ingredients

    In another bowl, whisk together the milk, egg, and vanilla extract until smooth.

    Combine Wet and Dry Ingredients

    Pour the wet mixture into the dry mixture, and gently stir until just combined. Do not overmix; it’s okay if there are a few lumps.

    Melt Butter

    In a skillet over medium heat, melt the unsalted butter and swirl it around to coat the bottom of the skillet.

Cooking the Pancakes

    Cook the First Side

    Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

    Add Fillings

    Once the first side is cooked, add your choice of fillings (blueberries, banana slices, chocolate chips, or French toast pieces) on top of the pancake.

    Cook the Second Side

    Carefully flip the pancake and cook for another 2-3 minutes, or until golden brown and cooked through.

    Repeat

    Repeat the process with the remaining batter and fillings, adding more butter to the skillet as needed.

Serving

    Serve the filled pancakes warm with maple syrup, whipped cream, or additional fresh fruit, as desired.
