Casserole Preparation

Cook the Sausage
In a large skillet over medium heat, cook the breakfast sausage until browned and crumbly, about 5-7 minutes. Drain excess fat.

Mix Eggs and Cheese
In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Stir in the shredded cheddar cheese.

Combine Sausage and Egg Mixture
Add the cooked sausage to the egg mixture and stir until evenly distributed.

Prepare Biscuit Layer
In a separate bowl, combine the biscuit mix, baking powder, and melted butter. Stir until a dough forms.

Layer the Casserole
Spread the biscuit dough evenly across the bottom of a greased 9x13 inch baking dish. Pour the sausage and egg mixture over the biscuit layer.

Bake the Casserole
Preheat the oven to 350°F (175°C) and bake the casserole for 30-35 minutes, or until the eggs are set and the top is golden brown.

In a medium saucepan over medium heat, cook the breakfast sausage until browned and fully cooked, about 5 minutes.

Add the flour to the cooked sausage and stir for 1-2 minutes to create a roux.

Gradually whisk in the milk, and bring the mixture to a simmer. Cook until thickened, approximately 3-5 minutes.

Add salt and black pepper to taste. Remove from heat and set aside.

Wash and chop the mixed fresh fruits into bite-sized pieces. Combine them in a bowl.
