Method
Preparation
- 1
Wash and Peel Potatoes
Thoroughly wash the Russet potatoes under cold water to remove any dirt. Using a vegetable peeler, peel the skin off each potato.
- 2
Cut the Potatoes
Cut each potato into evenly sized sticks, about 1/4 inch thick. Aim for uniformity to ensure even cooking.
- 3
Cooking
- 4
Heat the Oil
In a large pot or deep fryer, pour in the vegetable oil and heat it to 350°F (175°C). Use a thermometer for accuracy.
- 5
Dry the Potatoes
After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels to remove excess moisture.
- 6
Fry the Potatoes (First Fry)
Carefully add the dried potato sticks to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 4-5 minutes until they are pale and soft but not browned. Remove them with a slotted spoon and drain on paper towels.
- 7
Cool the Fries
Let the fries cool for about 15 minutes. This step is crucial for achieving a crispy texture.
- 8
Fry the Potatoes (Second Fry)
Increase the oil temperature to 375°F (190°C). Fry the cooled potatoes in batches again for 2-3 minutes until they are golden brown and crispy.
- 9
Drain and Season
Remove the fries from the oil and drain on fresh paper towels. Immediately sprinkle with salt, black pepper, and garlic powder to taste while still hot.
