BBQ Brisket Preparation

    Season the Brisket

    Rub the beef brisket with salt, black pepper, garlic powder, and onion powder. Ensure it’s evenly coated.

    Cook the Brisket

    Place the seasoned brisket in a slow cooker or smoker, add BBQ sauce, and cook on low for 8-10 hours until tender.

    Shred the Brisket

    Once cooked, remove the brisket from the cooker and shred it using two forks. Mix it back with the BBQ sauce.

Pepperjack Mac n Cheese Preparation

    Cook the Pasta

    Boil a pot of salted water and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk and bring to a simmer.

    Add Cheese

    Once the sauce is thickened, remove from heat and stir in shredded pepperjack cheese until melted. Season with salt and black pepper.

    Combine Pasta and Sauce

    Add the cooked macaroni to the cheese sauce and stir until well coated.

Grilled Cheese Assembly

    Prepare the Toast

    Spread butter on one side of each slice of Texas toast.

    Assemble the Sandwich

    On the unbuttered side of two slices, layer shredded BBQ brisket, pepperjack mac n cheese, red onions, and sweet pickles. Top with the other two slices, buttered side up.

    Grill the Sandwich

    Heat a skillet over medium heat and grill the sandwich for about 3-4 minutes on each side until golden brown and crispy.

    Remove the sandwich from the skillet, slice in half, and serve immediately.
