Preparing the Beer Battered Cod

    Make the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and free of lumps. Let the batter rest for about 15 minutes.

    Heat the Oil

    In a deep frying pan or a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of batter into it; it should sizzle and float to the top.

    Fry the Cod

    Dip each cod fillet into the beer batter, ensuring it is thoroughly coated. Carefully place the battered fillets into the hot oil, being cautious not to overcrowd the pan. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from oil and place on paper towels to drain excess oil.

Making the Homemade Tartar Sauce

    In a medium bowl, mix together the mayonnaise, finely chopped dill pickles, capers, lemon juice, and Dijon mustard. Stir until well combined.

Assembling the Cod Sandwich (Optional)

    If desired, lightly toast the buns on a skillet or grill. This adds a nice crisp texture.
