Pie Crust Preparation

    Make the Pie Dough

    In a large mixing bowl, combine 2.5 cups of all-purpose flour, 1 tablespoon of granulated sugar, and 0.5 teaspoon of salt. Mix the dry ingredients.

    Cut in Butter

    Add 1 cup of cold, cubed unsalted butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add 6 tablespoons of ice water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.

    Chill the Dough

    Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour.

Cherry Filling Preparation

    Prepare the Filling

    In a medium bowl, combine 4 cups of pitted cherries, 1 cup of granulated sugar, 2 tablespoons of cornstarch, 1 tablespoon of lemon juice, 1 teaspoon of vanilla extract, and 0.5 teaspoon of ground cinnamon. Stir until the cherries are evenly coated.

    Let it Sit

    Allow the filling to sit for about 10 minutes to let the juices release.

Assembly and Baking

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Roll Out the Dough

    Remove the dough from the refrigerator. Divide it in half and roll out one half on a floured surface to fit your pie pan.

    Add the Filling

    Place the rolled-out dough into the pie pan and pour the cherry filling into the crust, spreading it evenly.

    Top the Pie

    Roll out the second half of the dough and place it over the filling. You can either cut slits for a lattice top or leave it whole. Cut a few slits for steam to escape if leaving it whole.

    Brush and Sprinkle

    If desired, brush the top crust with the beaten egg and sprinkle 1 tablespoon of granulated sugar over the top.

    Bake in the preheated oven for 45-50 minutes, or until the crust is golden and the filling is bubbling. Check after 30 minutes; if the crust is browning too quickly, cover the edges with foil.
