Catfish Planks

Optional Sandwich Assembly

Method

Prep and Marinate Catfish

  1. 1

    Marinate the Catfish

In a bowl, combine the buttermilk and egg. Whisk together. Add the catfish fillets to the mixture and let them marinate for at least 30 minutes in the refrigerator.

Prepare the Coating

  1. 2

    Mix Dry Ingredients

In a shallow dish, combine the cornmeal, flour, cayenne pepper, salt, and black pepper. Mix well.

Fry the Catfish

  1. 3

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 4

    Coat the Catfish

Remove the catfish fillets from the buttermilk mixture, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring even coating.

  3. 5

    Fry the Catfish

Carefully place the coated catfish fillets in the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Make Tartar Sauce

  1. 6

    Mix Tartar Sauce Ingredients

In a bowl, combine the mayonnaise, chopped dill pickles, capers, lemon juice, salt, and black pepper. Stir well until all ingredients are combined. Refrigerate until ready to use.

Assemble Sandwich (Optional)

  1. 7

    Prepare the Buns

If using, slice the hamburger buns in half. Layer with leafy lettuce, a slice of tomato, and top with the fried catfish fillet. Add a generous dollop of tartar sauce on top and close the sandwich.
