Method
Preparation
Cook the Spaghetti
In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Drain and set aside.
Prepare the Sicilian Tomato Sauce
In a large skillet, heat the olive oil over medium heat. Add the diced yellow onion and cook until translucent, about 5 minutes. Add the minced garlic and crushed red pepper flakes, and sauté for another minute until fragrant.
Add Sun-dried Tomatoes and Artichokes
Stir in the chopped sun-dried tomatoes, sliced olives, and chopped artichokes. Cook for 3-4 minutes, allowing the flavors to meld.
Season the Sauce
Season the sauce with salt and black pepper to taste, and stir in the chopped fresh basil.
Cooking Shrimp
Combine and Serve
Toss Spaghetti with Sauce
Add the cooked spaghetti to the skillet with the Sicilian tomato sauce. Toss to coat the spaghetti evenly with the sauce.
Add Cooked Shrimp
Gently fold in the seared shrimp into the spaghetti and sauce mixture.
Serve and Garnish
Serve the Sicilian shrimp spaghetti hot, topped with crumbled feta cheese. Garnish with additional fresh basil if desired.
