Preparing the Chicken and Sauce
1. Season the Chicken
Season both sides of the chicken breasts with salt and black pepper.
2. Pan-Sear the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
3. Make the Sauce
In the same skillet, add minced garlic and capers. Sauté for about 1 minute until fragrant. Pour in the white wine, lemon juice, and lemon zest. Bring to a simmer and let cook for about 3-4 minutes to reduce slightly.
Preparing Broccolini and Mashed Potatoes
5. Cook the Potatoes
In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain and return to the pot.
6. Mash the Potatoes
Add butter, milk, garlic powder, salt, and black pepper to the drained potatoes. Mash until smooth and creamy.
7. Steam the Broccolini
While the potatoes are cooking, steam the broccolini for 4-5 minutes until tender but still vibrant green.
