Chicken Milanese

Prepare Chicken
Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.

Set Up Breading Station
Set up three shallow dishes. In the first dish, place the flour and season with salt and pepper. In the second dish, beat the eggs. In the third dish, combine the breadcrumbs and Romano cheese.

Bread Chicken
Dredge each chicken breast in flour, shaking off excess. Dip into the beaten eggs, allowing excess to drip off. Finally, coat with breadcrumb mixture, pressing gently to adhere.

Fry Chicken
In a large skillet, heat olive oil over medium-high heat. Once hot, add the breaded chicken breasts and cook for 4-5 minutes per side until golden brown and cooked through. Remove and drain on paper towels.

Cook Pasta
In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and reserve 1 cup of pasta water.

Assemble the Dish
On each plate, place a serving of herb pasta. Top with a piece of fried chicken, then layer with fresh mozzarella slices. Drizzle with marinara sauce and garnish with additional fresh basil if desired.
