Preparing the Pasta

Cook the Pasta
In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

Fill the Pasta
If using fresh pasta, fill each pasta piece with a tablespoon of ricotta cheese before sealing. If using store-bought filled pasta, skip this step.
Making the Sauce

Cook the Pancetta
In a large skillet, heat olive oil over medium heat. Add diced pancetta and cook until crispy, about 4-5 minutes.

Add Garlic and Spices
Add minced garlic and crushed red pepper flakes to the skillet, cooking for an additional 1-2 minutes until fragrant.

Add Tomato Sauce and Vodka
Pour in the tomato sauce and vodka, stirring to combine. Allow the mixture to simmer for 5-7 minutes.

Incorporate Cream and Cheese
Stir in the heavy cream and grated Parmesan cheese, mixing until the sauce is creamy and heated through. Season with salt and pepper to taste.

Add Fresh Basil
Remove the skillet from heat and stir in the chopped fresh basil.

Add the cooked pasta to the sauce, tossing gently to coat the pasta evenly with the sauce.

Serve hot, garnished with additional grated Parmesan cheese and basil if desired.
