Chicken Preparation

Prepare the Chicken
Flatten the chicken breasts to even thickness using a meat mallet and season with salt and black pepper.

Set Up Breading Station
Place the flour on a plate, beat the eggs in a shallow bowl, and mix the grated Romano cheese with breadcrumbs on another plate.

Bread the Chicken
Dredge each chicken breast in flour, dip into beaten eggs, and then coat with the Romano-breadcrumb mixture.

Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Fry the breaded chicken breasts for 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and drain on paper towels.

Cook the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Assemble the Dish
On a serving plate, place a portion of herb pasta, top with a fried chicken breast, and add slices of fresh mozzarella. Spoon marinara sauce over the top and garnish with fresh basil leaves.
