Preparation

Prepare the Chicken

1. Marinate the Chicken

In a bowl, combine olive oil, salt, pepper, and Italian seasoning. Add chicken breasts and coat them well. Let marinate for at least 30 minutes.

2. Grill the Chicken

Preheat the grill to medium-high heat. Grill the marinated chicken for 6-7 minutes on each side or until fully cooked. Remove from grill and let rest.

Prepare the Grain Base

3. Cook the Orzo and Farro

In a large pot, bring salted water to a boil. Add orzo and farro. Cook according to package instructions until tender. Drain and set aside.

4. Sauté the Vegetables

In a large skillet, add a splash of olive oil over medium heat. Add sliced mushrooms and sauté for about 5 minutes until they soften. Add fresh spinach and cook until wilted. Combine with orzo and farro, add pesto vinaigrette, and toss to mix well.

Assemble the Dish

5. Plate the Dish

On a large plate, create a bed of the orzo, farro, and spinach mixture. Slice the grilled chicken and place it on top.

6. Add Toppings

Sprinkle diced tomatoes and place slices of fresh mozzarella on top of the chicken. Drizzle balsamic reduction over the entire dish.
