Prepare the Vegetables

Wash and cut the zucchini, bell pepper, red onion, and mushrooms into slices.

Grill the Vegetables

In a large skillet or grill pan, heat 1 tablespoon of olive oil over medium heat. Add the prepared vegetables, sprinkle with salt and pepper, and sauté for about 5-7 minutes until tender and slightly charred. Remove from heat.

Prepare the Aioli

In a small bowl, mix together sun-dried tomato paste with the remaining tablespoon of olive oil. Add salt and pepper to taste.

Assemble the Sandwich

On two slices of sourdough bread, spread the sun-dried tomato aioli. Layer with grilled vegetables, spring mix, and feta cheese. Top with the remaining slices of sourdough bread.

Grill the Sandwich

Heat a panini press or grill pan over medium heat. Place the assembled sandwich in the press or pan, and grill for about 4-5 minutes on each side, or until the bread is golden brown and crispy.

Serve

Slice the sandwich in half and serve immediately. Enjoy your grilled veggie sandwich!
