Dough Ingredients

Method

Making the Muffins

  1. 1

    Prepare the Yeast

In a small bowl, combine warm water and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix the Dough

In a large mixing bowl, add the flour and salt. Make a well in the center and pour in the yeast mixture along with melted butter. Mix until a dough forms.

  3. 3

    Knead the Dough

Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

  4. 4

    First Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

  5. 5

    Shape the Muffins

Punch down the dough and turn it onto a lightly floured surface. Roll it out to about 1-inch thick. Use a round cutter to cut out muffins and place them on a baking sheet sprinkled with cornmeal.

  6. 6

    Second Rise

Cover the muffins with a cloth and let them rise again for about 30 minutes.

  7. 7

    Cook the Muffins

Preheat a skillet or griddle over medium-low heat. Cook the muffins for about 7-10 minutes on each side until golden brown and cooked through.

  8. 8

    Cool and Serve

Remove the muffins from the skillet and let them cool on a wire rack. Serve warm, split, and toasted with butter or your favorite toppings.
