Salmon and Sauce

Method

Cooking Instructions

  1. 1

    Prepare the Salmon

Pat the Wild King Salmon fillets dry with a paper towel. Season both sides with salt and black pepper.

  2. 2

    Sear the Salmon

In a large skillet, heat olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy, then flip and cook for an additional 3-4 minutes until cooked through.

  3. 3

    Make the Pinot Noir Reduction

Remove the salmon from the skillet and set aside. In the same skillet, add the Oregon Pinot Noir and thyme. Bring to a boil and reduce heat to a simmer. Cook until the sauce is reduced by half, about 5-7 minutes.

  4. 4

    Serve

Drizzle the Pinot Noir reduction over the salmon fillets. Serve alongside garlic whipped potatoes and fresh vegetables.
