Garlic Whipped Potatoes

Lamb Preparation

    Prepare the Lamb

    Preheat your oven to 400°F (200°C). In a bowl, mix minced garlic, chopped rosemary, olive oil, salt, and black pepper. Rub this mixture all over the rack of lamb.

    Roast the Lamb

    Place the rack of lamb in a roasting pan and roast in the preheated oven for 25-30 minutes for medium-rare, or until desired doneness.

Mint Sauce Preparation

    Make the Mint Sauce

    In a small bowl, combine chopped mint leaves, sugar, and white wine vinegar. Stir well and let sit for at least 15 minutes to allow flavors to meld.

Garlic Whipped Potatoes Preparation

    Cook the Potatoes

    In a pot, bring salted water to a boil and add the cubed potatoes. Cook until tender, about 15-20 minutes. Drain and return to the pot.

    Whip the Potatoes

    Add minced garlic, butter, and heavy cream to the drained potatoes. Mash and whip until smooth and creamy. Season with salt and black pepper to taste.
