Cooking the Elk Chops

    Season and Sear

    Season the elk chops with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the elk chops for about 4-5 minutes on each side, or until they reach your desired doneness. Remove them from the skillet and let them rest.

Making the Mushroom Cabernet Demi Glaze

    Prepare the Glaze

    In the same skillet, add butter and shallots. Sauté until the shallots are translucent. Add the sliced mushrooms and cook until soft. Pour in the Cabernet Sauvignon and beef broth, then add thyme, salt, and pepper. Simmer until reduced by half, about 10-15 minutes.

Making Whipped Potatoes

    Prepare the Potatoes

    Boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter, heavy cream, and salt, then whip until smooth and creamy.
