Filet Mignon Preparation

Season the Steaks
Pat the filet mignon steaks dry with paper towels. Season both sides generously with salt and black pepper.

Sear the Steaks
In a large skillet over medium-high heat, add olive oil. Once hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness.

Rest the Steaks
Remove the steaks from the skillet and let them rest for a few minutes before slicing.
Cabernet Sauvignon Sauce Preparation

Sauté Shallots
In the same skillet used for the steaks, add minced shallots and sauté for 2 minutes until fragrant.

Add Wine and Broth
Pour in the Cabernet Sauvignon and beef broth. Bring to a boil, then reduce to a simmer. Let it reduce by half, about 10-15 minutes.

Finish the Sauce
Stir in butter, thyme, and season with salt and pepper to taste.

Mash the Potatoes
Drain the potatoes and return them to the pot. Add minced garlic, butter, and heavy cream. Mash until smooth and creamy.
