Cheesecake Preparation

    Prepare the crust

    Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and salt. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and let cool.

    Make the cheesecake filling

    In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add granulated sugar and continue to beat until well combined. Add sour cream and vanilla extract, mixing until fully incorporated. Add eggs one at a time, mixing on low speed until just combined.

    Bake the cheesecake

    Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 45-50 minutes, or until the center is set and the edges are lightly golden. Turn off the oven and crack the door, allowing the cheesecake to cool slowly for 1 hour.

    Chill and serve

    Once cooled, refrigerate the cheesecake for at least 4 hours or overnight. Before serving, drizzle with raspberry puree.
