Cooking Instructions

  1. 1

    Prepare the Brown Rice

In a pot, bring 2 cups of water to a boil. Add 1 cup of brown rice and 1/2 tsp of salt. Reduce heat to low, cover, and simmer for about 45 minutes or until tender. Fluff with a fork and keep warm.

  2. 2

    Sauté the Vegetables

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add seasonal vegetables and sauté for about 5-7 minutes or until tender. Season with salt and pepper to taste. Remove from skillet and set aside.

  3. 3

    Cook the Abalone

In the same skillet, add 1 tablespoon of olive oil and 2 tablespoons of butter over medium-high heat. Season the abalone fillets with salt and pepper. Place them in the skillet and cook for about 2-3 minutes on each side until golden brown and cooked through. Remove from skillet and keep warm.

  4. 4

    Make the Sauce

In the same skillet, lower the heat and add the remaining 2 tablespoons of butter, lemon juice, capers, and white wine. Stir well and simmer for about 3-4 minutes to reduce and thicken slightly.

  5. 5

    Plate the Dish

On each plate, place a serving of brown rice, topped with sautéed vegetables. Lay the cooked abalone fillets over the rice and drizzle the lemon caper white wine butter sauce on top.
