    Marinate Chicken

    In a bowl, combine the soy sauce, mirin, sake, and sugar. Mix well until the sugar dissolves. Add the chicken breast to the marinade, ensuring it is well coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.

    Prepare Vegetables

    While the chicken is marinating, slice the green onions into thin rings, chop the bell pepper into bite-sized pieces, and julienne the carrot. Set aside.

Cooking

    Cook Chicken

    Heat a non-stick skillet or grill pan over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and place it in the pan. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice char.

    In the same skillet, add the chopped vegetables and stir-fry for about 3-4 minutes until they are tender but still crisp. Pour in the reserved marinade and cook for an additional 1-2 minutes, allowing the sauce to thicken slightly.

    Slice the cooked chicken breast into strips and arrange it on a serving plate. Top with the stir-fried vegetables. Sprinkle sesame seeds over the top and cut the nori sheet into strips to garnish the dish. Serve immediately.
