    Prepare the Battering

    In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper.

    Combine with Liquid

    Gradually whisk in the cold beer or sparkling water until the batter is smooth and the consistency is thick enough to coat the back of a spoon.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil to 350°F (175°C).

    Fry the Cod

    Dip each cod fillet into the batter, allowing excess to drip off, then carefully place it in the hot oil. Fry in batches for 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

French Fries

    Prepare the Potatoes

    Peel and cut the russet potatoes into long strips (fries).

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Fry the Fries

    Drain and pat dry the fries. In a separate pot, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 3-5 minutes. Remove and drain on paper towels, then sprinkle with salt.

Cole Slaw

    Mix the Vegetables

    In a large bowl, combine the shredded cabbage and carrots.

    Prepare the Dressing

    In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

    Combine and Chill

    Pour the dressing over the cabbage and carrots, mixing until well combined. Cover and refrigerate for at least 30 minutes before serving.

Tartar Sauce

    Combine Ingredients

    In a small bowl, mix together the mayonnaise, dill pickles, lemon juice, and capers.

    Add salt and black pepper to taste, mixing well.
