Braised Beef Short Ribs

Prepare the Ribs

Preheat your oven to 300°F (150°C). Season the beef short ribs with salt and black pepper on all sides.

Sear the Ribs

In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs in batches until browned on all sides, about 3-4 minutes per side. Remove and set aside.

Sauté Aromatics

In the same pot, add chopped onions and minced garlic. Sauté until the onions are translucent, about 5 minutes.

Deglaze the Pot

Pour in the beef broth and scrape the bottom of the pot to release any browned bits. Stir in Worcestershire sauce, brown sugar, apple cider vinegar, smoked paprika, bay leaves, and thyme.

Braise the Ribs

Return the seared ribs to the pot, ensuring they are submerged in the liquid. Cover with a lid and transfer to the oven. Braise for 12 hours.

Finish and Rest

After 12 hours, remove the pot from the oven. Let the ribs rest in the braising liquid for 30 minutes before serving.

Sweet Potato Fries

Prepare the Sweet Potatoes

While the ribs are braising, preheat your oven to 425°F (220°C). Toss the sweet potato strips in olive oil, salt, black pepper, and paprika.

Bake the Fries

Spread the sweet potatoes in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until crispy and golden brown.

Cole Slaw

Mix the Slaw Ingredients

In a large bowl, combine the shredded cabbage and grated carrot.

Prepare the Dressing

In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

Pour the dressing over the cabbage mixture and toss to combine. Refrigerate for at least 30 minutes before serving.
