Prepare the Ingredients
Wash and chop the bell pepper, green onions, tomato, and broccoli. Slice the mushrooms and set aside.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the sliced mushrooms, diced bell pepper, chopped green onions, diced tomato, and chopped broccoli. Season with salt and pepper. Cook for about 5-7 minutes, or until the vegetables are tender. Remove from heat.
Cooking the Quesadilla

Assemble the Quesadilla
Take one flour tortilla and place a generous amount of jack cheese on one half. Add a portion of the sautéed vegetable mixture on top of the cheese, then fold the tortilla over to cover the filling.

Cook the Quesadilla
In the same skillet, place the folded quesadilla and cook for about 3-4 minutes on each side or until golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.

Serve the Quesadilla
Cut each quesadilla into wedges and serve hot with salsa and sour cream on the side.
