Preparation
- 1
Prepare the Chicken (if using)
If using grilled chicken, season the chicken breast with your choice of spices (salt, pepper, cumin) and grill until fully cooked. Let it rest for a few minutes, then dice into bite-sized pieces.
- 2
Prepare the Chili (if using)
If using canned chili, open the can and heat it in a saucepan over medium heat until warmed through. If using homemade chili, ensure it is pre-cooked and warm.
- 3
Prep the Toppings
Dice the tomato, slice the black olives, chop the red onion, scallions, and jalapeno peppers.
Assembly
- 4
Layer the Base
On a large serving platter or baking dish, spread the tortilla chips evenly across the bottom.
- 5
Add Protein
Spoon the warmed chili or the grilled chicken pieces evenly over the tortilla chips.
- 6
Add Cheese
Sprinkle the shredded jack cheese generously over the top, ensuring even coverage.
- 7
Add Vegetables
Scatter the diced tomatoes, sliced black olives, diced red onion, chopped scallions, and sliced jalapenos over the cheese layer.
Serving
- 8
Serve the Nachos
Place the assembled nachos under a broiler for 2-3 minutes or until the cheese is melted and bubbly. Remove from the oven and serve immediately with salsa and sour cream on the side.
