    Prepare the Potatoes

    Wash and scrub the Russet potatoes under running water to remove any dirt. Pat them dry with a clean towel.

    Slice the Potatoes

    Using a sharp knife or a mandoline slicer, slice the potatoes thinly (about 1/16 inch thick) for optimal crispiness.

    Soak the Potato Slices

    Place the sliced potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This will help remove excess starch.

    Dry the Potato Slices

    After soaking, drain the potato slices and pat them dry with paper towels or a clean kitchen towel to remove excess moisture.

    Heat the Oil

    In a large, deep pot or a deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potato Slices

    Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot. Fry them for about 3-4 minutes or until they turn golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the fried chips from the oil and place them on a paper towel-lined plate to drain excess oil. While they're still hot, sprinkle with salt and pepper to taste.

    Continue frying the remaining potato slices in batches until all are cooked. Adjust seasoning as needed.

    Combine Ingredients

    In a medium bowl, combine the mayonnaise, hot sauce, Cajun seasoning, lemon juice, and garlic powder.

    Using a whisk or a spoon, mix all ingredients thoroughly until smooth and well combined.

    Chill the Sauce

    Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld.
