Preparing the Grilled BBQ Short Ribs

    Marinate the Ribs

    In a bowl, combine the BBQ sauce, olive oil, salt, and black pepper. Add the boneless short ribs and coat them well. Cover and let marinate in the refrigerator for at least 1 hour or overnight for best results.

    Grill the Ribs

    Preheat the grill to medium-high heat. Remove the short ribs from the marinade and place them on the grill. Grill for about 5-7 minutes on each side, or until they reach an internal temperature of 145°F (63°C). Remove from the grill and let them rest for 5 minutes before slicing.

Assembling the Salad

    Prepare the Vegetables

    While the ribs are resting, wash and dry the mixed salad greens. In a large salad bowl, combine the greens, cherry tomatoes, cucumber, red onion, and roasted red peppers.

    Add the Ribs and Dressing

    Slice the grilled short ribs into strips and add them on top of the salad. Sprinkle the crumbled feta cheese over the top. Drizzle with balsamic vinaigrette to taste.

    Toss and Serve

    Gently toss the salad to combine all ingredients. Serve immediately while the ribs are still warm.
