Method
Preparing the Brussel Sprouts

Trim and Halve
Rinse the brussel sprouts under cold water. Trim off the stem ends and any yellow or damaged leaves. Cut each brussel sprout in half lengthwise.

Season
In a large bowl, toss the halved brussel sprouts with olive oil, salt, and black pepper until they are well coated.
Cooking the Brussel Sprouts

Heat the Oil
In a large skillet, heat over medium-high heat, add a tablespoon of olive oil. Allow it to get hot, but not smoking.

Finish Cooking
Once the brussel sprouts are crispy, flip them and cook for an additional 3-4 minutes until tender and heated through.
Making the Sweet Chile Aioli

Combine Ingredients
In a bowl, add the mayonnaise, sweet chili sauce, minced garlic clove (minced finely), and lime juice.

Mix Well
Whisk the mixture until smooth and well combined. Adjust seasoning to taste.
Serving

Plate the Dish
Once the brussel sprouts are cooked, transfer them to a serving platter.

Serve with Aioli
Serve the crispy brussel sprouts with the sweet chile aioli on the side for dipping.
