    Prepare the Ingredients

    Start by dicing the cooked chicken breast into small pieces. Chop the green onions finely, separating the white and green parts. Dice the tomatoes into small cubes.

    Assemble the Quesadilla

    Heat a non-stick skillet over medium heat. Place one tortilla in the skillet and sprinkle half of the jack cheese evenly over the tortilla.

    Add Fillings

    Layer the diced chicken, chopped green onions (both white and green parts), and diced tomatoes on top of the cheese. Sprinkle the remaining jack cheese over the fillings.

    Cook the Quesadilla

    Top with another tortilla, pressing down gently. Cook for 3-4 minutes until the bottom tortilla is golden brown. Carefully flip the quesadilla and cook for an additional 3-4 minutes until the second side is golden and the cheese has melted.

    Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve warm with salsa and sour cream on the side.
