    Prepare the Chicken

    Grill the chicken breast until fully cooked, about 6-7 minutes per side. Once cooked, let it rest for a few minutes, then chop into small pieces.

    Sauté the Onions

    In a skillet over medium heat, add a splash of oil and sauté the diced onion until they are translucent and slightly caramelized, about 5-7 minutes.

    Combine Chicken and Sauce

    In a bowl, mix the chopped grilled chicken with buffalo sauce until well coated.

    Assemble the Quesadilla

    Lay one tortilla flat on a clean surface. On one half of the tortilla, layer 1/2 cup of shredded jack cheese, followed by 1/2 cup of the buffalo chicken mixture and a spoonful of sautéed onions. Top with another 1/2 cup of shredded jack cheese. Fold the tortilla in half to enclose the filling.

    Cook the Quesadilla

    In a skillet over medium heat, add a little oil. Place the folded quesadilla in the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy. Repeat with remaining tortillas.

    Cut each quesadilla into wedges. Serve hot with a side of salsa and sour cream.
