Preparation of Special Sauce

Make the Sauce
In a small bowl, combine mayonnaise, ketchup, mustard, garlic powder, paprika, salt, and black pepper. Mix until smooth and set aside.
Cooking the Filling

Cook Ground Beef
In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

Fill the Tortillas
Lay a tortilla flat and spread a generous amount of the special sauce on one half. Add a portion of the beef and onion mixture, followed by a handful of shredded jack cheese, shredded lettuce, and pickles. Fold the tortilla over to form a half-moon shape.

Cook the Quesadilla
In the same skillet, over medium heat, place the folded quesadilla. Cook for about 3-4 minutes on each side until the tortilla is crispy and golden brown, and the cheese is melted.

Serve
Remove the quesadilla from the skillet and let it rest for a minute before cutting into wedges. Serve hot with additional special sauce on the side.
