Preparation Steps

    Prepare the Breakfast Potatoes

    Dice the breakfast potatoes and boil them in salted water for about 10 minutes until slightly tender. Drain and set aside.

    Cook the Sausage

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage, breaking it apart with a spatula, and cook until browned and fully cooked, about 5-7 minutes. Remove the sausage from the skillet and set aside.

    Roast the Tomatoes

    In the same skillet, add the grape tomatoes and roast for about 3-4 minutes until they start to blister. Remove and set aside.

    Sauté the Spinach

    Add another tablespoon of olive oil to the skillet. Add the spinach and sauté until wilted, about 2 minutes. Season with salt and pepper.

    Scramble the Eggs

    In a bowl, whisk the eggs with a pinch of salt and pepper. Pour the eggs into the skillet and cook gently, stirring occasionally, until just set.

    Add the cooked sausage, roasted tomatoes, and Grana Padana cheese to the eggs. Gently fold everything together until combined and the cheese has melted.

    While the eggs are finishing, toast the ciabatta slices until golden brown.
