1. Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides.
2. Sear the Chicken
Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 3-4 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
3. Cook the Vegetables
In the same skillet, add butter and sauté minced garlic for about 30 seconds. Add mushrooms and cook until they are tender, about 5 minutes. Stir in cherry tomatoes and cook for an additional 2-3 minutes.
4. Make the Lemon Caper Sauce
Add lemon juice and capers to the skillet, stirring well to combine. Allow to simmer for a minute.
5. Combine and Serve
Return the chicken to the skillet, top with provolone and feta cheese, and cover for 1-2 minutes until the cheese melts. Serve hot.
