1. Prepare the Chicken
Preheat the grill to medium-high heat. Season the chicken breasts with olive oil, salt, and black pepper.
2. Grill the Chicken
Place the seasoned chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
3. Slice the Tomatoes and Mozzarella
While the chicken is grilling, slice the beefsteak tomatoes and fresh mozzarella into thick slices.
4. Assemble the Caprese
Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Place a slice of tomato and mozzarella on top of each chicken breast.
5. Add Pesto and Balsamic Reduction
Drizzle the pesto vinaigrette over the tomato and mozzarella, then drizzle the balsamic reduction on top.
6. Garnish and Serve
Garnish with fresh basil leaves, and serve immediately.
